Hot chocolate is just one of those winter musts! Coming in from the cold and warming up with a special treat. Or popping into a coffee shop, especially now the Christmas season is upon us, and taking shelter from whatever the weather is throwing at us (most likely rain for us in the UK).

But, as we all know, regular treats of warming drinks whilst we are out and about can soon add up expense wise. So why not just wait to you get home, get comfy and enjoy the creaminess of this delicious homemade soy peppermint hot chocolate...especially knowing you don't need to go back out in the cold. What's even better is you can cater the taste to suit yourself, you may want to add another square of chocolate to make it richer or stir in a candy cane to make it extra pepperminty.

The past week I've been pretty much living of apples, oats, frozen kale, rice and beans because that's what happens when you keep forgetting to do a food shop. So I finally got round to it at the weekend, ordering it online so I can order more without breaking my back carrying it home. I may have got a bit carried away but at least I'll be good for a few weeks (hopefully). Oh wow, you probably don't really care about my food shopping, have I turned into an adult? Getting excited about food shopping? Anyway, I've been waiting all week for it to arrive just so I can add that extra Christmas touch of the candy canes to this recipe.

We all know that Christmas is right around the corner, the music has began playing in stores, we are surrounded by people carrying the Christmas coffee cups and decorations in shops. I haven't yet seen a house decorated, but there will be some houses somewhere out there with their tree most likely already up. So of course, this is where I begin cooking up the Christmassy recipes or at least winter warmers my mum always use to make which I associate with Christmas. I did make the Christmas cake a few weekends ago and that just makes me overly happy (come on it's the best part of Christmas, well in my opinion).

This hot chocolate is a lovely treat for the Christmas season, it's super simple but super creamy and delicious.

Creamy Soy Peppermint Hot Chocolate
Hot chocolate, the perfect warming treat during winter. Give it a christmassy twist with the addition of peppermint!
  • 1 tbsp Cacao powder
  • Mug full Soy milk
  • Small drop Peppermint extract
  • 1-2 tsp Liquid sweetner
  • 1 square Dairy free dark chocolate
  • Candy cane (optional)
1. Measure out your milk using your cup of choice then pour into the pan and bring to a simmer until hot but not burning.2. In a mug, mix together the cacao powder and a drop of water to make a paste. Make sure there are no lumps of powder.3. Add to the mug your liquid sweetener of choice and peppermint extract.4. Pour some of the milk from the pan into the chocolate mixture and mix then pour the contents of the mug back into the pan, return to heat and add in the square of dark chocolate, stirring continuously. 5. After it is heated through, pour into your mug and serve.If you are using a microwave, begin with step 2 and 3 then top up the mug with milk. Place in the microwave for 3 minutes, stirring at minute intervals and adding in your chocolate square after 2 minutes.
